Will I lose quality?

MP3 is lossy, so some audio detail is discarded, but at the quality used here the result is transparent for most listeners. Keep the WAV if you need a master copy.

Can I convert to FLAC instead?

Yes. Choose FLAC in the Audio tab for a lossless file that is about half the size of WAV.
